Year 11 Preliminary Course
Food Properties:
- Make a variety of food products which demonstrate properties such as aeration, caramelisation, gelatinisation.
- Sensory assessment of food -- appearance, aroma, taste, texture.
- Food prep -- hygienic work methods -- prevent food poisoning.
- Food presentation -- food styling and photography.
Food Availability and Selection:
- Historical changes to availability of staple foods and developments in the food industry.
- Factors affecting food selection:
- Physiological

- Survey and analyse the eating patterns of a selected group of individuals.
- Changes in the Australian context :

- Health and nutrition issues
- Marketing strategies (advertising)

Nutrition:
- Structure of protein, carbohydrates and lipids.
- Function of nutrients in your body.
- RDI of nutrients.

Diet and Health -- disorders related to specific nutrient deficiency in Australia, including calcium, iron, thiamine:
- Diet and lifestyle disorders in Australia -- diabetes, steroids, allergies, etc.
- Preventative strategies for diet and lifestyle disorders.
- Diet planning.
- Nutrition in a global scale and environmental sustainability.
- Design, prepare and present food for optimal nutrition.

Food Marketing

- Design a marketing strategy which promotes improved community health, in relation to foods designed to address particular diet and lifestyle disorders.
