You will need:

lamb, beef, or lean pork

olive oil (about 2 tablespoons per 1 kg meat)

lemon juice (1 lemon per 1 kg meat)

oregano

freshly ground black pepper

 

What to do:

(1) Cut the meat into small pieces (about the size of a walnut) and thread onto the skewers. If you wish, put a small piece of onion, green pepper or a bit of bay leaf between each bit of meat. (2) Beat the lemon juice into the olive oil,season with the oregano and black pepper. Dip the souvlakia into the marinade for at least half an hour. (3) Cook under a very hot grill, turning constantly, so that the meat becomes well seared on the outside and tender and juicy inside. (4) Serve immediately and garnish with lemon quarters to squeeze over the meat.
