Introducing Indian CookeryTaj Mahal image

Indian cooking, the cuisine of the people. Full of tradition, flavour and spice. Indian cooking goes back thousands and thousands of years. Some of the traditions have been dated as the oldest in the world, and have been passed down from generation to generation.

India is such a vast country, every extremity of climate is held within the borders of India. From the snowy Himalayas to the hot and humid coastline. All around India there are different regions from which different flavours and spices originate. This depends on the agricultural industry, the climate and the traditions of the people living in the region. In Kashmir the spices are warm as the climate is cold. Kashmir is the coldest and northern most part of India. Whereas the Punjab follow the traditions of the Mughali and aren't as rich in flavour as other traditional methods.
