You will need:
2 ripe avocados
a little lemon juice
2 fresh tomatoes, finely chopped
1/2 an onion, finely chopped
1 chilli, finely chopped
2 tablespoons of finely-chopped fresh coriander
What to do:
Mix together all the ingredients, apart from the avocados, in a bowl and sprinkle with a little lemon juice. (1) Cut the avocados in half, remove the stones and scoop out the flesh with a spoon, making sure to scrape the skins dry. Mash the flesh with a fork and add it to your mixture. (2) Mix everything well, making sure that you don't make it too smooth. The texture should be a little coarse which is why it is not a good idea to use a processor for this dish. Serve it as an accompaniment to a meal or, better still, as a lovely starter. (3) Spoon it into a serving bowl, sprinkle some chopped coriander over it and serve with tortilla chips which can be used to scoop out the guacamole.
