
315g chicken breast 1 small bunch fresh sweet basil leaves 60g chicken liver and giblets (optional) 2 tbsp parsley, finely chopped 2 tbsp vegetable oil 2 tbsp fish sauce 4 tbsp small green birds-eye chillies OR green chillies sliced
Chop chicken breast, liver and giblets into small cubes. Heat oil and fry chicken on moderate heat for 3 minutes, then add chillies, half the basil and chopped parsely. Cook, stirring frequently, for 5 minutes. Splash on fish sauce and stir briefly.
Spoon chicken and herbs onto a serving dish and surround with remaining basil leaves.
